I have three recipes I want to share today. Mine and my husbands diet are focused on low sodium and low protein - due to health reasons (plus we all consume way too much sodium without even realizing...). Which is why we try to eat home cooked meals as often as possible! So when purchasing ingredients I choose health food stores that provide no-salt added options.
The 3 recipes I have today all happen to have meat in them and they are all dinner recipes. They are also 3 of my favorite meals. Enjoy!
Chipotle Salsa Tilapia, Pina Colada Chicken Salad, and Taco Salad.
Chipotle Salsa Tilapia (served with Brown Rice and Southwestern Side Salad)
Trader Joe's Chipotle Salsa
(if you don't use this salsa refer to this recipe instead)
NO SALT Tortilla Chips
Crunch up Tortilla Chips in small pieces. Rinse frozen Tilapia and coat the flat side generously with Salsa. Sprinkle generously with Chips and place face down on cookie sheet (PAM sheet). Do the same to the top. Cook fish at 350 degrees for 25 minutes.
1 Small Avocado
1/4 c. Plain Greek Yogurt
1 Tbsp. Lime Juice
2 Tbsp. Milk
Mrs. Dash Original
Mash up avocado and mix with yogurt and lime juice. Mix in milk and seasonings. Add Cilantro on top for garnish.
Pina Colada Chicken Salad
-1 Egg White
Run frozen chicken under water. Put egg white in container and dip each chicken tender in the egg mixture. Generously sprinkle coconut onto chicken on one side, then coat with panko crumbs, lay face down in sprayed baking sheet. Cover other side. Cook at 425 degrees for 20 minutes. Or at 350 for 30 minutes.
-Lettuce Mix (Spring or Romaine)
-Canned Mandarin Oranges
-6 oz. Vanilla Yogurt
-2 Tbsp Pina Colada Mix
-2 tsp Cider Vinegar
Taco Salad with Ground Turkey
-1 pkg. Ground Turkey
-1 can NO SALT Black Beans
-1 TB Chili Powder
-¼ tsp Garlic Powder
-¼ tsp Onion Powder
-¼ tsp Crushed Red Pepper Flakes
-¼ tsp Dried Oregano
-½ tsp Paprika
-1 ½ tsp Ground Cumin
-1 tsp Black Pepper
-Lettuce (Veggie Lovers)
-NO SALT Tortilla Chips
-Plain Greek Yogurt
Brown ground turkey, drain, and add beans and taco seasoning. Set aside. On plate crunch up tortilla chips, add lettuce and cheese. Place meat on top and garnish with tomatoes, olives, avocado, and cilantro. Add a spoonful of Greek Yogurt and top with Catalina, lime, and Tapatio.
Starting today Taylor and I are doing a 3 day cleanse. So depending on how that goes, I will be posting about it next time. Lots of juices and smoothies.

For fitness I choose Pilates, Yoga, Cycling, Elliptical, and Weight Lifting.
